Cucumber Tomato Farmer’s Market Salad

Farmer’s Markets, Memorial Day Weekend, the end of the school year. All herald the coming of summer!

The Farmer’s Markets have officially opened in our area, and it’s inspired a return to fresh and light salads! No need for heavy dressings or added sugar. Keep it clean and enjoy the natural flavors coming through!

This salad is also featured as a part of the Ultimate Reset, a 21 day plant based detox I did in May. The results for my body inside and out were amazing! Did you know that cucumbers support the digestive tract, including helping to cleanse the liver, which is our main detoxifying organ, by removing accumulated toxins and waste materials from the blood and gut. They’re also a natural diuretic food, which means they can help the body carry out toxins and waste. In the process, they’re great for reducing bloating and uncomfortable water retention — one reason to fill up on cucumbers after a night of salty food or alcohol.
FARMER’S MARKET SALAD

*1 english cucumber
*1 cup cherry tomatoes
*1/2 small red onion
*2 Tbsp rice vinegar (no sugar/no sodium variety)
*1 tsp. balsamic vinegar
*1 Tbsp extra-virgin olive oil
*1 Tbsp fresh lemon juice
*1 Tbsp chopped fresh parsley
*1 Tbsp chopped fresh basil leaves
Himalayan salt (to taste; optional)

Dice the cucumber, cherry tomatoes, and onion and combine.
Mix together the vinegars, olive oil, and lemon juice, then pour over salad.
Top with fresh parsley and basil, then stir to combine all the flavors.
Chill for an hour and serve. Flavors develop even more if you let it sit overnight!

Perfect paired with a grilled lean protein like fish or chicken.
